Equipment

  • 1 Oven
  • 1 Cookie Sheet or Pizza Pan
  • 1 Medium sized Mixing Bowl
  • 1 Measuring Cup / Measuring Spoons
  • 1 Rolling Pin
  • 1 Spatula or Whisk

Ingredients

  • 1 cup Hot Water (Make sure it's hot to the touch)
  • 1 packet Fast-Rising Yeast (Any brand)
  • 1 tbsp Olive Oil (I use regular olive oil, but extra virgin is fine too.)
  • 1 tbsp Stevia (You can use whatever sweetener or sugar you desire; I prefer Stevia.)
  • 1/2 cup Parmesan Cheese (I normally use about 1/4 to 1/2 cup. I just eyeball it.)
  • 1 tsp Salt
  • 1 and 3/4 cups Almond Flour
  • 1 cup All-purpose flour (Keep extra all-purpose flour out, this will also be used for kneading and rolling out the dough.)
  • 1 tbsp Garlic Powder (This is optional. Feel free to add other seasoning as well.)

Instructions

First step before starting the dough...

  • The first thing I suggest is for you to figure out what kind of pizza or food you're making with this dough.
For example, if you're making Homemade Breakfast Pizza, you're going to want to bake your dough before adding toppings.
If you're doing a traditional cheese and pepperoni pizza, you're going to add your toppings before baking.
  • After deciding what kind of pizza you want to make, preheat your oven to 500 degrees.

Start with the Yeast...

  • Start by getting one cup of water and heating it. I normally put it in the microwave for one minute and go until it's hot to the touch.
  • Once the water is good and hot, add one full packet of the Fast-Rising Yeast, one tablespoon of stevia, and one tablespoon of regular olive oil into the water and mix it.
  • Let the yeast and water mixture sit for about five to ten minutes off to the side.

The Dry Ingredients...

  • In a medium mixing bowl, combine the following:
One and 3/4 cups of almond flour
    One cup of all-purpose flour
1/4 to 1/2 cup of parmesan cheese
    One teaspoon of salt
  • This is also where I add other seasonings like garlic powder or pepper if I wanted. Please note, the additional seasonings are completely optional.

Combine and Knead

  • After the yeast has had time to absorb, combine the liquid with the flour and mix.
  • Once the dough is all combined, transfer it over to your counter or where you plan to roll the dough out.
  • The dough will still be softer and sticky, so this is where I add more all-purpose flour, a little at a time while kneading the dough.
  • It helps to make the dough less sticky when sprinkling more all-purpose flour while kneading.

Get Rolling...

  • Once the dough is firmer and the kneading is complete, form it into a ball.
  • Take your rolling pin of choice (metal, wood, or plastic, it doesn't matter) and start rolling it out to fit your pan size.
  • I normally use a 16x10 cookie sheet that is about 1/2 inch thick.
  • After your dough is at your desired thickness, get ready to make the transfer.
  • REMEMBER... before transferring your dough to the cookie sheet or pan, make sure you either grease or spray so it doesn't stick.

The final steps...

  • Once you transfer your dough, depending on the pizza you decided to make, you need to either add your toppings or bake the crust.
  • After figuring out if you need toppings yet or not, bake for about 15 minutes or until golden brown.
  • EAT YOUR YUMMY CREATION!

Notes

Tip...

To make it easier when transferring your dough to the cookie sheet, roll the dough onto the rolling pin itself. (Be sure to add a little bit of all-purpose flour where the dough meets so it will actually unroll for you.) Then unroll it onto the sheet.
