The Best Homemade Pizza Muffins Ever!

If you haven’t tried homemade pizza muffins, you’re really missing out! These single-serving pull-apart muffins are cheesy enough to make your mouth water and have your guests begging for more!

Pizza is a worldwide staple that brings comfort into homes everywhere. So why not turn it into yummy muffins, am I right? The best part about this recipe is that it’s customizable and easy, so you can enjoy these pizza muffins with little effort! 

It’s a Healthier Option too??

Wait… how could pizza be healthier but still cheesy and gooey??? Guess what… it’s actually possible. This recipe is a spin-off of my Homemade Pizza Dough Recipe which uses almond flour and no refined sugar. These pizza muffins call for Stevia or any sweetener that you prefer to use, just like the pizza dough. That way when you have one, two, three, or even four you don’t have to feel guilty about it! 

Ingredients for the Dough

  • 1 cup of Hot Water
  • 1 packet of Fast Rising Yeast 
  • 1 Tablespoon of regular Olive Oil
  • 1 Tablespoon of Stevia (or any sweetener/sugar you choose) 
  • Parmesan Cheese (1/4 to 1/2 a cup, this ingredient is optional) 
  • 1 teaspoon of Salt 
  • 1 and 3/4 cups of Almond Flour 
  • 1 cup of all-purpose flour 
  • Garlic Powder (Optional but recommended)
  • Green Onions (Optional but so good!)
  • Accent Seasoning (Optional but recommended)

Additional Ingredients for the Pizza Muffins

  • Pepperoni (I really like the Turkey Pepperoni)
  • Onions (Again optional)
  • Shredded Mozzarella Cheese (I used the Reduced Fat option) 
  • Any other Pizza topping you would choose

Tools Used to Make the Pizza Muffins…

First things First… 

Before you start prepping the dough, preheat your oven to 500 degrees so that it has time to heat while the dough is being formed. After that get one cup of water and heat it. I normally put it in the microwave for one to two minutes. I basically go until it’s hot to the touch.

Once the water is good and hot, add one full packet of the Fast-Rising Yeast, one tablespoon of stevia, and one tablespoon of regular olive oil into the water and mix it. You can use extra virgin olive oil, but I personally use regular olive oil. Let the yeast and water mixture sit for about five to ten minutes 

While You Wait … 

While you are waiting for the yeast to sit in the water mixture, in a medium to a large sized mixing bowl, combine the following: one and 3/4 cups of almond flour, one cup of all-purpose flour, 1/4 to 1/2 cup of parmesan cheese, and one teaspoon of salt. This is also where I add other seasonings like garlic powder and Accent if I want. Please note, that the additional seasonings are completely optional. If I were to pick one I would highly recommend the Accent Seasoning as it just makes everything taste better!

You KNEAD these Pizza Muffins … 

After the yeast has had time to absorb, combine the liquid with the flour and mix. For this process, I suggest using a spatula instead of a whisk. The spatula will make it much easier, trust me! Once the dough is all combined, transfer it over to your counter or where you plan to work the dough. 

The dough will still be softer and sticky, so this is where I add more all-purpose flour a little at a time while kneading the dough. Kneading the dough is essential to working the yeast and flour together. If you don’t knead the dough, it will not turn out.

LOG it…

Once the dough is more firm and the kneading is complete, form it into a log. I make mine about two inches in diameter. After the log is formed, slice the log into one-inch-thick slices, as if you were slicing bread. After the entire log has been sliced, take each slice and cut them into smaller pieces I normally get about 3-4 little pieces from each slice. 

Note… the pieces do not have to be perfectly symmetrical.

How Does this Turn into a Pizza Muffin?? 

After you have all of your little pieces, take about half of them and toss them in a bowl with a little bit of olive oil. (Enough to make them not stick all together and form back into a ball.) Toss the little pieces with olive oil and add any additional seasonings and toppings. After the first half has been tossed, add in the second half and repeat. 

Make sure you add in a little bit of shredded mozzarella while tossing so that the cheese melts inside, this will help create the gooey effect! Another note… I normally take the pepperoni and cut them into 4s so that the entire pepperoni doesn’t take over the muffin. So make sure you adjust the sizing of your toppings as needed.

Make the Pizza Muffins! 

After the mixture has been tossed, take a spoon and spoon the coated dough pieces and toppings into a cupcake baking pan. MAKE SURE YOU SPRAY YOUR PANS!!!! Top each muffin with a little more cheese and pop them into the oven for about 12-14 minutes or until golden brown. 

Serve them with cheesy dipping sauce or marinara sauce and ENJOY! 

Additional Remarks…

These pizza muffins are a great appetizer for a party or even a fun dinner idea! My husband absolutely LOVES them and always gets excited when I tell him that’s what we are having for dinner!
